Salvajes Brasserie is a cozy, contemporary French bistro tucked into a classic downtown former house on Hidalgo Street. Opened in 2022, the intimate space features a stylish indoor dining room and a bar perched near the kitchen; a perfect setting to enjoy live jazz or blues while sipping an aperitif like the house-special “Salvajes” (Lillet Blanc, violet liqueur, and tonic) or select wine and craft beer. Chef Jorge Avendaño leads the kitchen with seasonal, locally sourced artistry, delivering standout dishes such as coq au vin, beef pie with mustard and dill vinegar, ratatouille, tuétanos with escargots, braised tongue, steak frites, and crème brûlée.
